This is our favorite! I actually let my kids have this homemade ice cream for breakfast the other day, knowing that they'd be getting all those healthy fats and nutrients, and less maple syrup than if they'd had some on a pancake! (Find more healthy breakfast ideas here.)

So we borrowed my friend Sonia's Ice Cream Maker last week and went crazy with that thing. After my friend, Julie, raved about the Nourishing Traditions recipe, I had to try it.

Wow, she was right, it was amazing. I would even venture to call this a low carb and healthy treat, just wait until you see these ingredients, it's full of nutrients. It only has a half cup of real maple syrup in 1 1/2 quarts of ice cream, so it's a natural sweetenerAND there's not that much of it!

The BEST Homemade Ice Cream Recipe

Nourishing Traditions VANILLA Ice Cream recipe (1.5 quart)

Ingredients:

  • 3 egg yolks (be sure you use good quality eggs from a local farmer who raises healthy pasture-fed chickens…I wouldn't recommend eating raw eggs from the grocery store.)
  • 1/2 cup real maple syrup (I've been making it with 1/3 cup and it's still great!)
  • 1 Tablespoonvanilla extract
  • 1 TablespoonArrowroot FlourThe BEST Homemade Ice Cream Recipe: Vanilla, Chocolate or Mint Chocolate Chip (6)
  • 3 1/2 cups heavy cream/whipping cream, preferably from pastured cows and raw, but for sure NOT ultra-pasteurized (read why not at that link) — I also like to add in as part of that amount our grass-fed raw milk – it's not quite as heavy tasting that way.
  • Dash of sea salt
  • Optional: Add this extra superfood ingredient for gut health and for extra creamy flavor and texture: 2-3 Tablespoons colostrum
  • Also optional: half-scoop of this grass-fed collagen–great for hair, nails, and also for your immune system.

Instructions:

Beat egg yolks and blend in remaining ingredients. Pour into ice cream maker and process according to instructions.

CHOCOLATE ice cream (1.5 quart)

Ingredients:

  • 1/2 cupreal maple syrup (See above, try it with 1/3 cup, it's still great!)
  • 3 egg yolks
  • 3 1/2 cups heavy cream (see above)
  • 1 1/2 Tablespoonsorganic cocoa powder
  • Dash sea salt
  • Again, optional: half-scoop of this grass-fed collagenand 2 teaspoons of this colostrumfor extra gut-building nutrients!

Instructions:

Same as above,I think I liked chocolate the best, but they're both dreamy.

UPDATE: I got the above ice cream maker for Christmas (yay!) and here are the amounts for the 2 quart recipes…

2 quarts CHOCOLATE ice cream:

  • 2/3 cupreal maple syrup (Lately I've been making it with only 1/2 cup and it's still great!)
  • 4 egg yolks
  • 4 2/3 cup cream (I use about 3 cups cream, 1 2/3 cups whole milk/raw milk if you like it with a bit lighter taste)
  • 2 Tablespoonsorganic cocoa powder
  • Dash sea salt
  • Again, optional: half-scoop of this grass-fed collagenand 2 teaspoons of this colostrumfor extra gut-building nutrients!

Instructions:

Same as above.

2 quarts VANILLA ice cream:

Ingredients:

  • 2/3 cupreal maple syrup (Lately I've been making it with only 1/2 cup and it's still great!)
  • 4 egg yolks
  • 4 2/3 cup cream (or 3 cups cream, 1 2/3 cups whole milk/raw milk if you like it with a bit lighter taste)
  • 1 Tablespoonvanilla(more to your taste)

2 quarts MINT CHOCOLATE CHIP ice cream:

Instructions:

  • Make vanilla as directed above, and add in 1/2 teaspoon of peppermint extract, and then put in some chocolate chips when it's almost done–it was the best mint chocolate chip ice cream we've ever had! (The kids ask for it all of the time.) NOTE: I think the mini chocolate chips are the best in this, and here's an allergen-free kind that has a good ingredient list.

Note, I asked on Facebook for ideas on how to make this green (for St. Patrick's Day!) without food coloring and got some good responses–see the comments below!
